Heat olive oil in a pan, add onion and saute till soft. Add the tomatoes, tomato puree, garlic and bell peppers and cook till mushy. Add the salt, pepper and cumin. Now crumble in the feta and mix.
Make small wells and break your eggs gently into them.
Cover and cook for 3-4 mins or till the whites are set. Garnish with basil or coriander and serve with toast.
